Chef Jack Cole is woven through West Yellowstone's tapestry. Both his name and reputation have been chronicled here through the years and now his story continues. Jack joined the Ranch as Executive Chef in early December 2006 and since has been treating locals & visitors alike to a bit of what he's famous for ... great classical cuisine.
Jack has offered the following thoughts about what a guy like him is doing in a place like this. "A chef in an area as seasonal as Yellowstone needs a philosophy that follows those seasons. In the winter, these mountains are flush with folks skiing, snowmobiling, and working up an appetite. I'm going to make certain that they have a killer steak and potatoes to warm them up and keep that energy flowing. The summer season brings visitors just as active, but we're all looking for something a little lighter in the heat of July: fresh salads, fresh seafood, great foods that won't weigh you down. In the slow season we're a close-knit community. Down to earth people who work hard and appreciate the opportunity to enjoy a fantastic dinner any evening ... not just to celebrate a special day. The idea is to be inventive, be progressive, but also to be sure that we're appealing to the great diversity of both the Yellowstone visitor and the folks who call this place home." |
